Ringana Valore Nu Shak (Brinjals with Beans)

Ingredients |
- 350 grams Brinjals
- 150 grams Walor papdi (Broad beans)
- 1 1/2 teaspoon Ginger-chilli paste
- 1 Tomato

- 1/2 teaspoon Turmeric powder
- 1 pinch Soda bi-carb
- 3 tablespoon Oil
- Salt (As per taste)

Method |
Chop the brinjlas into 1"long and 1/2" thick pieces. Thread and split the broad beans into halves. Chop the tomato.
Cover and cook the beans with soda, salt, oil and 1 cup water for 5-6 minutes on a medium flame. Pour some water on the lid to enhance steaming. Add the chopped brinjals and stir. Cover and cook for another 8-10 minutes.
Add the ginger-chilli paste, chopped tomato, turmeric powder and stir. Cover and simmer till the vegetables are tender. Adjust seasoning if necessary.
Serve hot with rotis.
