 Puran Poli (Paratha stuffed with sweet lentils) 
  • 200 grams Wheat flour
  • 250 grams Maida
  • 50 grams Ghee
  • 150 grams Bengal gram dal
  • 100 grams Jaggery
  • a pinch Cardamom powder
  • Ghee
For the dough:mix both the flours and rub in the fat. Add sufficient water and knead to a soft and smooth dough. Rest the dough for an hour at least.

For the filling:Clean, wash and soak the dal. Boil till tender and then drain.

Melt the jaggery and add the dal. Mix well and pass through a suitable sieve to blend together.

Flavour with the nutmeg or cardamom. The mixture should be firm and dry.

Divide the dough and filling into portions.

Flatten each portion of the dough and add a portion of the filling and seal the dough.

Carefully, roll into a thick chappati.

Cook on a slow tava to ensure the poli is done.

Wrap in a clean towel and serve with pure ghee or a bowl of warm milk.
