Corn Curry

Ingredients |
- 6 Corn cobs
- 50 gram Roasted peanuts
- 2 Chopped onions
- 400 gram Tomatoes
- 2 tablespoons Cornflour
- 1 cup Coconut milk
- 1/2 cup Chopped coriander leaves
- 1 teaspoon Red chilli powder
- 1 teaspoon Sugar
- 2 tablespoons Ghee

- 5 Green chillies
- 1 tablespoon Coriander seeds
- 1 teaspoon Poppy seeds
- 1/2 inch Ginger
- 1 teaspoon Cumin seeds
- 1 teaspoon Cumin seeds
- 5 Black peppercorns
- 1 cup Grated coconut
- Salt (As per taste)

Method |
Pressure cook the corn cobs with a little salt water. Cool and separate the kernels. Roast and grind the peanuts to a coarse powder. Blanch the tomatoes and chop finely. Grind together the green chillies, poppy seeds, cumin seeds, grated coconut, coriander seeds, ginger and pepper to a fine paste.
Heat ghee, add the finely chopped onions and sauté till golden brown. Then add the ground paste and sauté for 4-5 minutes. Add red chilli powder and the finely chopped tomatoes. Fry till tomatoes are tender. Mix the corn flour and the coconut milk together. Beat well to avoid lumps. Add this into the above tomato mixture. Add the corn kernels, peanut powder, salt and sugar. Add a little water if needed. Boil for 8-10 minutes.
Garnish with chopped coriander and serve hot.
