Goan Rice Pilaf (Goan Rice Pulao)

Ingredients |
- 2 cups Basmati rice
- 8 Cloves
- 6 Cardamoms (green)
- 2 small sticks Cinnamon
|
- 2 medium Onions
- 2 small Tomatoes
- 1 litre Chicken stock
- Salt (As per taste)

Method |
Wash and soak the rice in water for about 30 minutes. Drain.
Heat ghee or oil in a wide bottomed pan, add cloves, cardamoms and cinnamon. Fry for a few seconds. Add the onions and fry till they are brown in colour. Add the tomatoes and cook till they are soft and pulpy. Add the drained rice and fry gently for a minute. Add the stock and salt and bring to a boil.
Cover and simmer for about 30 minutes or till the rice is done. Serve hot with fish curry.
