Whole fish with garlic and spices

Ingredients |
- 700 grams Fish
- 2 Garlic cloves
- 1 Lemon
- 1 Green chilli
- 1 inch Ginger
- 1/4 cup Coriander leaves
- 1 teaspoon Garam masala

- 1.2 teaspoon Cardamom powder
- 1 tablespoon Almonds
- 1 medium Onion
- 2 tablespoons Vegetable oil
- Pepper powder(As per taste)
- Salt(As per taste)

Method |
Use sea bass or grey mullet, if possible, cleaned and scaled. Pierce the eyes with a sharp knife to prevent them from popping during cooking, and then slash the fish 3 times on each side. Set aside.
Grate the lemon rind and ginger; ground the almonds and fresh coriander. Dice the onion.
Put the garlic, lemon rind and juice, chilli, ginger ground and fresh coriander, garam masala, cardamom, almonds and onion in a blender until you have a smooth paste.
Put half of the oil in a medium bowl and stir into paste. Microwave on High for 2-3 minutes, until thickened, stirring occasionally. Spoon the mixture into the slashes and the inside of the fish.
Place the fish on a large ovenproof serving plate; pour the remaining oil over it and season with salt and pepper. Cover loosely with cling film, pulling back one corner to allow the steam to escape, and microwave on High for 4 minutes per 450 g (1 lb) or until tender, turning the fish over once during the cooking process.
Garnish with fresh coriander and serve.
