Tomato Saar

Ingredients |
- 6 medium Tomatoes
- 1 1/2 cups Water
- 2 tablespoons Grated coconut
- 1 teaspoon Chopped green chillies
- 1 teaspoon Jaggery
- 1 tablespoon Oil

- 1/2 teaspoon Mustard seeds
- 1/4 teaspoon Cumin seeds
- 1 pinch Asafoetida
- 10-12 Curry leaves
- Salt (As per taste)

Method |
Wash and chop the tomatoes. Add water and pressure cook till soft (cook on a medium flame till the first whistle and then cook on a low flame for 3-4 minutes). Cool the boiled tomatoes and pass through a sieve.
Heat the tomato extract. Add salt, coconut, green chillies and jaggery. Cook uncovered on a low flame for about 5 minutes. Remove from heat, cover and keep aside.
Heat oil in a small pan, add mustard seeds, cumin seeds and asafoetida. When the seeds start spluttering add the curry leaves and quickly pour into the tomato extract. Cover and keep aside for 3 minutes. Garnish with chopped coriander leaves.
Serve hot with rice.
