 Sticky Devil Cake 
  • 1 1/4 cups all purpose flour
  • 1/4 cup Cornstarch
  • 1/2 Unsweetened Cocoa
  • 3/4 cup Sugar
  • 1/4 tsp Baking Soda
  • 1/2 cup Ground Almonds
  • 2 Eggs
  • 1/2 cup Pure Corn oil
  • 3/4 cup Maple Syrup
  • 3/4 cup Milk
  • 1/3 cup butter
  • 1 1/3 cup Icing sugar
  • 1 Egg Yolk
  • 4 squares Semi-Sweet Chocolate
Grease and line two 18cm/7 in round cake tins. Sift together the flour, cornflour, cocoa, sugar and baking soda and stir in the ground almonds.
Mix and beat well the eggs, cornoil, syrup and milk. Add to dry ingredients to form a smooth batter. Divide the mixture into the cake tins and bake in a preheated cool oven for 2-2 1/4 hrs . Allow to cool before turning out. To make the icing, beat together the butter and icing sugar until light and creamy.
Beat in eggs yolk and stir in melted chocolate. Use half the icing to sandwich the sponge cakes together and thickly coat the top of the cake with the remaining icing.
