 Spiced Roast Leg of Lamb 
  • 2 kg Leg of lamb
  • 1 tablespoon Lemon juice
  • 1 teaspoon Black pepper
  • 12 Garlic cloves
  • 2 tablespoons Ghee
  • 1 1/2 tablespoons Coriander powder
  • 2 teaspoons Cumin powder
  • 2 sticks Cinnamon
  • 2 Cloves
  • 4 Bay leaves
  • 1 teaspoon Chilli powder
  • 4 Crushed cardamoms
  • 1 1/2 cups Water
  • 1/2 cup Cream
  • Salt(As per taste)
Trim fat from lamb and rub with lemon juice and pepper. Place in a roasting pan with garlic cloves and ghee. Roast in a moderately hot oven for about 50 minutes, until the garlic cloves are soft.

Slightly squeeze the cooked garlic(it should not be peeled). Spread evenly on the surface of the lamb and sprinkle coriander and cumin powder. Add the cinnamom sticks, cloves, bay leaves, chilli powder and cardamom to the pan.

Cook lamb further for 50 minutes until done, basting occasionally with the juice in the pan. Remove the roast and set aside for 10-15 minutes before carving.

Add water to baking pan, stir to combine juices, place on top of stove over high heat and reduce until thickened. Remove whole spices, season to taste. Stir in cream or yoghurt and heat through. Spoon over the carved roast.
