Baathk (Semolina - Coconut Cake)

- 1 1/2 kg Semolina
- 1 Coconut (fresh)
- 2 Cup Sugar
- 4 Eggs
- 20-25 Raisins
- 4 tablespoons Butter

- 1 teaspoon Baking powder
- 2-3 drops Vanilla essence
- 1 pinch Cardamom powder
- 12-15 Cashew nuts
- 1 pinch Salt

Method |
Grind the coconut to a fine paste. Roast the semolina in a pan till it is light brown. Cream the butter and sugar till light and fluffy. Add slightly beaten egg yolks and mix well. Keep adding semolina spoon by spoon and mix well. Add the grated coconut and baking powder. Beat the egg whites until stiff and fold into the mixture. Add salt, nuts, raisins, vanilla essence and cardamom powder. Mix well. Keep aside for 6-8 hours. Grease and dust a baking tin, pour the baathk mixture and bake in a pre-heated oven at 350 F for 1 hour or till the cake is cooked.
