Magic Chocolate Pudding

Ingredients |
- 75 gm self raising flour
- 2 tbsp cocoa powder
- Pinch of salt
- 100 gm castor sugar
- 1/2 tsp vanilla flavouring
- 2 eggs, lightly beaten

- 1-2 tbsp milk
- Margerine for greasing
- 100 gm light soft brown sugar
- 2 tbsp cocoa powder
- 300 ml pint boiling water

Method |
Heat the oven to 190C. Lightly grease a 1.5L/2 1/2 pint fairly deep ovenproof pie dish.

Sift flour into a bowl with cocoa powder and salt, then set aside.
Beat the margarine and castor sugar together until pale and fluffy, then beat in the vanilla. Beat in the eggs a little at a time, adding 1 tbsp of the flour mixture with the last few additions of egg. Add enough milk to give a smooth consistency.

Spoon the mixture into the prepared dish, spread it evenly and level the surface. Mix together the brown sugar and cocoa powder, then gradually blend in the water, stirring vigorously to avoid lumps.
Pour the sauce over the mixture in the pie dish.
Bake just above the center of the oven for 40 minutes, or until the pudding is well risen and browned and the chocolate sauce beneath is syrupy.
Serve the pudding while it is hot.
