Paatishapta (Coconut Pancakes)

Ingredients |
- 1 cup Refined flour
- 4 tablespoons Rice
- 1 pinch Soda bi-carb
|
- 1 1/2 cup Grated coconut
- 1/2 tin Condensed milk
- 3 tablespoons Ghee
|

Method |
Mix the coconut and condensed milk thoroughly. Soak the rice for 2 hours and grind to a fine consistency. Mix the ground rice, flour, soda and a little water to make a smooth batter.
Heat a nonstick pan. Smear it with a little ghee. Put 1-2 tbsp. of the batter on the pan and smear to make a small pancake. Cook for 2-3 minutes, put some of the coconut-milkmaid mixture on this pancake at one end and roll over to the other end.
Serve warm.
