Muri Ghanto (Fish Head Curry cooked with Rice)

Ingredients |
- 1/2 kg Fish
- 1 1/2 tablespoons Cumin paste
- 1 tablespoon Coriander paste
- 1/2 tablespoon Turmeric paste
- 1/2 teaspoon Chilli paste
- 1 tablespoon Ginger paste
- 3 tablespoons Rice

- 1 cup Water
- 8-10 tablespoons Oil
- 1 tablespoon Ghee
- Bay leaves
- 1/2 tablespoon Garam masala powder
- 1 teaspoon Sugar
- Salt (As per taste)

Method |
Wash fish head thoroughly and fry in hot oil until just brown. Remove and break the heads into pieces with the back of a spoon or the end of a knife. Clean and wash the rice.
In the same pan in which fish head is cooked add the masala pastes to the remaining hot oil. Fry for about 5 minutes, then add the rice, mix thoroughly with the masalas and fry for about 5 minutes.

Add water and the broken fish head, salt and sugar to taste. Stir well.
Cover, reduce heat to a mild simmer and continue cooking, stirring from time to time, until nearly all the water is absorbed and rice is cooked.

In an separate pan, heat the ghee, add bay leaves fry for a few minutes and then pour over Muri Ghanto.
Add garam masala powder to the curry. Stir. Cook for a couple of minutes and remove from fire.
Small cubed potatoes may be fried and added to the Muri Ghanto towards the end of cooking period.
