 Luchi (Deep fried Puffed Bread) 
Ingredients
  • 250 grams Flour
  • 1/2 tablespoon Ghee
  • 1 pinch Salt
  • Water
  • Ghee
Method
Sieve the flour and salt. Add ghee and sufficient water to bind and knead into a soft pliable dough. The kneading of the dough is most important for success in making puffed luchis.

Divide into 32 small balls and roll on floured board into rounds of approximately 4-inch diameter as thinly and evenly as possible.

Deep fry one at a time in korai, pressing the centre of the luchi gently with a slotted spoon until luchi puffs up. Fry for a minute, turn and fry the other side for another minute. Using a slotted spoon remove luchi from pan, draining off ghee.
