Labra (Mixed Vegetable Curry)

Ingredients |
- 4 small Brinjals
- 4 medium Sweet potatoes
- 1/2 kg Green peas
- 2-3 teaspoons Chopped coriander leaves
- 2 tablespoons Coriander powder
- 6-8 Cardamom seeds
- 1 medium Coconut
- 2 medium Raw bananas
- 200 grams Pumpkin
- 200 grams White pumpkin

- 1/2 kg Tomatoes
- 1/4 kg Carrots
- 6 Red chillies
- 1 teaspoon Cumin powder
- 1 inch Turmeric
- 1 inch Ginger
- 1 inch Cinnamon
- 1/2 teaspoon Asafoetida powder
- Oil
- 1 tablespoon Butter

Method |
Wash and chop the vegetables. Soak them in cold water and keep aside. Grind the coconut, cinnamon, ginger, turmeric, coriander powder, cumin powder, cardamom seeds and chillies into a fine paste with little water. Lightly fry the ground paste in melted butter.
Heat 3-4 tbsps oil in a deep pan and add asafoetida. Add the ground paste and chopped coriander leaves and sauté for a minute or two. Add 2-3 cups of water and bring to a boil. Add all the vegetables and bring to another boil. Cover and simmer till the vegetables are cooked and the gravy is thick.
