Kosha Mangsho (Mutton cooked in its own juices)

- 700 grams Mutton
- 125 grams Onions
- 6 Cloves
- 1 tablespoon Ginger-garlic paste
- 5 Cardamoms (green)
- 4 Cardamoms (black)
- 2 Cinnamon

- 2 teaspoons Red chilli paste
- 1 1/2 teaspoons Turmeric powder
- 1 1/2 teaspoons Cumin seed powder
- 3 tablespoons Curd
- 3 tablespoons Mustard oil
- Salt (As per taste)

Method |
Heat oil in a deep bottomed pan, add the whole spices (cloves, cardamoms, cinnamon). When they start crackling, add the sliced onions. Fry till the onions are transparent. Add the ginger-garlic paste. Saute for 2-3 minutes and then add red chilli paste and turmeric powder. Fry for half a minute. Add the mutton pieces and cook on a low flame till oil leaves the sides of the pan. Add the curd, cumin powder and salt. Cook for another 15 minutes.
Cover and cook on indirect heat (place a tawa/griddle on low flame and place the pan with the mutton on top of this tawa). Cook for about 15 minutes or till the mutton is tender.
Serve hot with rotis or rice.
