Panch Poron Tarkari (Five-spice vegetables)

Ingredients |
- 1 large Brinjal
- 1 large Potato
- 150 grams Pumpkin
- 1 Red chilli
- 2 tablespoons Oil
- 1/2 teaspoon Aniseed
- 1/2 teaspoon Mustard seeds
- 1/2 tablespoons Cumin seeds

- 1/2 teaspoon Fenugreek seeds
- 2 Bay leaves
- 2 Green chillies
- 1/2 teaspoon Sugar
- 1 teaspoon Turmeric powder
- 1 teaspoon Milk
- Salt (As per taste)

Method |
Chop all the vegetables.
Heat oil in a deep bottomed pan and add all the spices, stir until they splutter. Add all the chopped vegetables. Mix well. Add the green chillies, sugar, salt, turmeric and mix thoroughly. Add the milk and enough water.
Cook till the vegetables are tender and the water is absorbed.
