Dimer Jhol (Egg Curry)

Ingredients |
- 4 Eggs
- 2 Potatoes
- 1 Onion
- 1/2 teaspoon Ginger
- 2-3 Garlic cloves
- 1/2 teaspoon Green chilli paste
- 1 teaspoon Garam masala

- 1 teaspoon Coriander seed powder
- 1 1/2 teaspoon Turmeric powder
- 1 teaspoon Cumin seed powder
- 1/2 teaspoon Red chilli powder
- 2 cups Water
- Oil
- Salt (As per taste)

Method |
Boil and peel the potatoes and the eggs.
Heat oil in a deep bottomed pan and fry cubed potatoes till they are golden brown in colour. Remove and keep aside. Make small slits on each egg, coat with 1 tsp turmeric powder and fry the eggs until evenly brown. Remove and set aside.

In the remaining oil, add chopped onions and saute till golden brown. Add the chilli paste, ginger and garlic and fry for a few minutes. Add the garam masala powder, chilli powder and cumin powder. Stir well and fry for 1 minute on a low flame.
Add the fried potatoes, salt and the remaining turmeric and fry till the masala evenly covers the potatoes (approx 5-7 minutes).

Add warm water and bring to a boil. Once it starts boiling, cover and simmer till the potatoes are done. Add the eggs and simmer for another 10 minutes.
Garnish with chopped coriander.
