Dahi Baigan (Brinjals in Yogurt)

Ingredients |
- 2 large Brinjals
- 30 grams Mustard seeds
- 100 grams Curd
- 5 grams Turmeric powder

- 5 grams Red chilli powder
- 1 pinch Sugar
- Salt (As per taste)

Method |
Chop the brinjals into thin roundels. Deep fry in hot oil and keep aside.
Soak mustard seeds in water for 10 minutes and grind to a fine paste.
Beat the curd well. Add the mustard paste, salt and turmeric powder, mix well.
Heat 1 tablespoon of oil in a pan and add the curd mixture and fried brinjals. Cook on a slow flame for 2-3 minutes and add the chilli powder. Serve hot.
