 Begun Posto (Brinjals with poppy seeds) 
  • 1 large Brinjal
  • 2 Red chillies
  • 1/4 teaspoon Fenugreek seeds
  • 1 1/2 tablespoons Garlic paste
  • 1 teaspoon Green chilli paste
  • 1/4 teaspoon Turmeric powder
  • 1/4 cup Water
  • 2 tablespoons Poppy seeds
  • 1/2 teaspoon Sugar
  • 2-3 tablespoons Mustard oil
  • Salt (As per taste)
Roast the eggplant over direct flame. Cool, mash & set aside. Grind the poppy seeds with a little water to make a fine paste.

Heat oil in a pan, add the red chillies, fry till they change colour. Add the fenugreek seeds, garlic paste, green chilli paste and fry till the garlic paste is brown in colour. Add the turmeric powder and water. When the water starts boiling, lower the heat and add the mashed eggplant. Add the poppy seed paste, salt and sugar. Mix well. Cover and simmer for about 20 minutes. Keep stirring occasionally to avoid sticking.
