Bandkopir Dalna (Cabbage Curry)

Ingredients |
- 1/2 kg Cabbage
- 2 Potatoes
- 2 tablespoon Oil
- 1 teaspoon Turmeric powder
- 1 teaspoon Green chilli paste
- 1 tablespoon Cumin seed powder
- 1 teaspoon Coriander powder

- 1/2 teaspoon Ginger
- 2 Bay leaves
- 1/2 teaspoon Garam masala
- 1/4 teaspoon Mustard seeds
- 1/2 teaspoon Sugar
- 2 tablespoon Coriander leaves
- Salt (As per taste)

Method |
Chop the potatoes. Shred the cabbage finely.
Heat oil in a deep bottomed pan and fry chopped potatoes till light brown. Remove and keep aside. To the hot oil add cabbage and salt. Cover and simmer for 3-4 minutes. Add the turmeric powder, chilli paste, cumin powder, coriander powder and ginger. Mix well. Fry till the spices are well blended with the cabbage i.e. for about 3-5 minutes. Add very little water and the potatoes. Adjust seasoning and add sugar to taste.
Simmer over medium heat until potatoes are cooked and there is no water in the pan.
Heat 1 tbsp oil in a small pan, add the mustard seeds, when they start crackling add the bay leaves and the garam masala. Pour over cooked cabbage. Mix the cabbage well and take off fire.
Garnish with chopped coriander. Serve hot with rotis.
