 Aloo Begunar Jhol (Brinjal & Potato Curry) 
  • 250 grams Potatoes
  • 250 grams Brinjals
  • Salt(As per taste)
  • 1 tablespoon Mustard oil
  • 1 teaspoon Mustard seeds
  • 1 level tablespoon Ginger paste
  • 2 Green chillies
  • 2 Garlic cloves
  • 4 Curry leaves
  • 1/2 teaspoon Turmeric powder
  • Few Coriander (greens)
Chop the chillies, coriander and garlic fine.

Boil potatoes and cool,then skin and cut into large cubes. Cut the brinjals into cubes of the same size, place in a bowl and cover with cold salted water.

Heat oil in a frying pan, add mustard seeds and when they splutter, add ginger, half the chillies, garlic and curry leaves. Fry for about one minute, stir in the tumeric and the drained brinjal.

Cover and cook for about 5 minutes, until it is cooked. Add the potatoes. Fry on a higher flame, turning the vegetables over for 5 minutes. Season to taste, add the rest of the chillies and sprinkle with coriander before serving.
