 Sheermal (A spongy round flat bread) 
Ingredients
  • 1 teaspoon Dry yeast
  • 2 tablespoons Sugar
  • 1 cup Milk
  • Salt (As per taste)
  • 1 tablespoon Butter
  • 1 Egg
  • 3 cups Flour
Method
Heat the yeast and soak in 1/3 cup warm water with a pinch of sugar and leave for 10 minutes.

Warm milk on a slow fire till a skin forms on the surface, then remove from fire.

Mix sugar, salt and milk. The yeast should rise and become frothy in 10-20 minutes, When milk is tepid, add to yeast and stir with a wooden spoon.

Add ghee or melted butter, egg, milk and yeast to flour. Knead very well to make a pliable dough that is not too soft. Leave to rise in a covered bowl.

In about 2 hours when the dough has risen, make 6 seperate balls of the dough. Pat each one into a thick flat round bread about 1/2" thick and 6" wide and leave aside for another hour to rise again. Spread a little ghee and milk on top of each to keep them soft.

Bake in oven at 230C or 450F, Gas mark 7 for 20 mins or until the top becomes reddish brown.
