Malpowa (Sweet semolina)

Ingredients |
- 3/4 cups Semolina
- 1 cup Maida
- 1/4 cup Khoya
- 1 1/2 cups Sugar
- 2 cups Water

- 1/4 teaspoon Soda bi-carb
- 1/4 teaspoon Cardamom powder
- 1 1/2 cups Milk
- 1 tablespoon Oil

Method |
Soak the suji in milk for couple of hours. Make a sugar syrup by boiling the sugar in the water over a low flame, stirring constantly, then allow to cool. If you pinch the surface between your thumb and forefinger it should have a two-strand consistency not too thin, not too thick. Set it aside.
Sift the maida and soda together, add 1 tbsp. oil and khoya, and then mix it with the soaked suji. If the khoya is bought from a shop, you will need to grate it to ensure the batter is soft. If the batter is too thick add extra milk to it.
Heat oil in a round-bottomed pan. Use a soup ladle to drop the batter into the hot oil and deep fry until golden brown. Dip each one in tern in the syrup. When all are done, sprinkle cardamom powder and pour remaining syrup over the malpowa.
