Shakkarpara

Ingredients |
- 250 grams Wheat flour
- 300 grams Ghee

Method |
Add 4 tbsp. ghee to the flour and mix with finger tips until well incorporated. Sprinkle water and fold into a stiff dough. Knead it well and roll into a thick roti. Cut into small cubes or diamond shapes and fry in ghee until golden. Make sure that it is cooked through to the core.
Make a thick syrup with sugar and add the fried shakkarparas. Mix well so that they are all properly coated with the syrup. Spread out over a large flat surface to dry. A fine white coating of sugar will tell you it's ready to store in an airtight container.
