 Mattar Paratha (Peas Paratha) 
  • 5 tablespoons Peas (fresh)
  • 1/4 teaspoon Chopped ginger
  • 1 tablespoon Lemon juice
  • 2 Green chillies
  • 1 tablespoon Coriander leaves
  • 1 tablespoon Ghee
  • 2 cups Wheat flour
  • 3/4-1 cup Water
  • Salt (As per taste)
Make a smooth dough with the flour and water. Cover with a damp cloth and keep aside for about 2 hours. Knead again just before cooking. Par boil the peas.

Heat 1 tbsp ghee in a pan, add the peas, ginger, salt and red chilli powder(as per taste). When just tender add lime juice and simmer for 2-3 minutes till well blended. Remove from heat. Add green chillies, coriander leaves. Mash slightly. Make small balls of the filling mixture.

Take a little bit of the dough, flatten it slightly. Place the filling mixture ball onto this flattened dough. Pinch the edges of the dough mixture to form a ball.

Roll the filled balls gently on a pastry board (chakla) with a rolling pin, sprinkling little flour on the paratha from time to time to avoid sticking. Heat the griddle. Place the rolled paratha on the griddle, cook till small blisters appear on the surface. Do the same for the other side. Smear a little ghee on the surface and slightly along the edges. Cook for a minute. Flip over. If the top is very dry add a little more ghee on top.
