Mathura Ke Dubkiwale Aloo (Potato Curry)

Ingredients |
- 6 Potatoes
- 3 Green chillies
- 1 teaspoon Mango powder (dried)
- 1 tablespoon Red chilli powder
- 1 tablespoon Turmeric powder
- 2 tablespoon Sugar

- 1 tablespoon Cumin Seeds
- 1/4 tablespoon Asafoetida
- 1 cup Coriander leaves
- Oil
- Salt (As per taste)

Method |
Peel and cube the potatoes.
Heat oil and add asafoetida and cumin seeds. When the seeds start crackling, add the potatoes, turmeric, ginger, mango powder, sugar and salt. Add water to make into a thin gravy.
Cover and cook till the potatoes and the gravy get homogenised. Remove from fire and keep aside.
Heat 1 tbsp oil, pour it over the potatoes and immediately sprinkle with chilli powder and coriander leaves. Serve with puris.
