Lau Khar (Stir-fried Bottle gourd)

Ingredients |
- 1 kg Bottle gourd
- 2 teaspoons Baking powder
- 2 Bay leaves
- 1 tablespoon Ginger

- 2 tablespoons Mustard oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Fenugreek
- Salt (As per taste)

Method |
Grate the bottle gourd and steam with salt and soda. Cool.
Heat oil, add mustard and fenugreek seeds and allow to splutter. Add ginger and bay leaves. Stir for a couple of minutes to incorporate the flavouring and add the cooked gourd. Stir fry on a medium flame for 4-5 minutes.
Serve with hot white rice.
