 Kamalar Payesh (Orange Kheer) 
Ingredients
  • 6 Orange
  • 3 litres Milk
  • 3/4 cup Sugar
  • 1 tablespoon Sugar
Method
Use big oranges, like the Nagpur variety if possible. Peel, deseed and then remove the skin of each orange segment as well. Place in a bowl and add 1 tablespoon of sugar. Set aside.

Boil the milk till it reduces to about half its volume by boiling in a thick-bottomed pan over a low flame. Remember to stir constantly. Once milk is thickened add sugar and keep stirring constantly so it doesn’t form lumps.

When the consistency is semi-solid take it off the fire and let it cool. Drain all excess juice from the oranges and reserve for use in other desserts by placing in an airtight container and freezing. Add the oranges and mix in gently. Place in fridge to chill.
