Pulli Kodayal (Tamarind Kodayal)

Ingredients |
- 200 grams Ash gourd
- 2 Green chillies
- 1 tablespoon Grated jaggery
- 2 tablespoons Tamarind paste
- 1 bunch Chopped coriander leaves
- 1 cup Grated coconut
- 7 Red chillies
- 1/4 teaspoon Fenugreek seeds
- 1 teaspoon Sesame seeds

- 1 tablespoon Bengal gram dal
- 1 1/2 tablespoons Urad dal
- 1 tablespoon Coriander seeds
- 1/2 teaspoon Asafoetida
- 1 teaspoon Mustard seeds
- 2 tablespoons Oil
- Few Curry leaves
- Salt(As per taste)

Method |
Dry roast the coconut till golden brown and set aside. Heat 1 tbsp oil and fry 6 red chillies, sesame seeds, chana dal, 1 tbsp urad dal, coriander seeds and asafoetida till the dals are golden in colour. Grind to a fine paste with the coconut, tamarind paste and water.
Heat 1 tsp oil and fry the mustard seeds, remaining urad dal and red chillies, and curry leaves till the seeds start spluttering. Add the chopped ash gourd, salt and 2 cups water. Cover and simmer till cooked. Add slit green chillies, ground paste, grated jaggery and simmer till well blended.
Garnish with chopped coriander leaves and serve with rice.
