 Keerai Mashial (Mashed Amaranth) 
  • 2 bunches Amaranth
  • 1/4 cup Green moong dal
  • 2 teaspoons Ghee
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Urad dal
  • 1 Red chilli
  • 1/2 teaspoon Asafoetida
  • Salt(As per taste)
Pressure cook the dal and set aside. Wash and chop the amaramth finely. Steam the leaves and blend to a puree.

Add the dal and salt and simmer.

Heat ghee in a small pan, add the mustard seeds, cumin seeds, urad dal, red chilli and asafoetida. When the seeds start spluttering, pour into the mashed amaranth.

Serve hot with rice.
