Samosa

Ingredients |
- 500 grams Potatoes
- 100 grams Peas (fresh)
- 3 teaspoons Aniseed
- 3 teaspoons Coriander seeds
- 6 teaspoons Oil
- 1 teaspoon Black salt
- 2 teaspoons Coriander powder
- 1 teaspoon Mango powder (dried)
- 1/2 teaspoon Pepper powder

- 2 teaspoons Garam masala
- 1 teaspoon Red chilli powder
- 1/2 inch Chopped ginger
- 5 Chopped green chillies
- Oil
- 250 grams Refined flour
- 5 teaspoons Ghee
- Salt (As per taste)

Method |
Mix the refined flour with ghee, salt and water. Knead to make a soft dough.

Boil the potatoes and cut the potatoes into very small pieces. Boil the peas. Heat oil, add ginger, green chillies and stir for two minutes. Add the chopped potatoes, peas, coriander seeds, aniseeds and all the remaining ingredients. Mix well and keep the stuffing aside.

Divide the dough into 15 pieces. Roll each piece on a rolling board into a round shape. Cut the round into two equal halves. Fold one piece and make a cone sticking the edge with the help of little water. Fill each cone with a little portion of the stuffing. Close the cone firmly on top. Repeat for the rest.
Heat oil in a deep bottomed pan, fry a few samosas at a time over medium heat till golden brown.
Serve hot with chutney or ketchup.
