 Rajput Rice Pilaf (Saffron- colored rice) 
  • 2 cups Rice
  • 2 Shallots
  • 1/2 teaspoon Saffron
  • 1 cup Butter milk
  • 2 Lemon
  • 100 grams Almonds
  • 1 tablespoon Ghee
  • 3 Cardamoms (black)
  • Coriander leaves
  • 1/2 teaspoon Pepper
  • Salt (As per taste)
Wash and drain the rice, peel and slice shallots, thinly. Soak the saffron in milk.
Heat ghee and shallots in a deep casserole on High for 3 minutes. Stir in the rice and cook for 3 minutes on High, stirring once. Add salt, pepper, cardamoms, and saffron with milk. Pour in water until it is 2 1/2 cm above the level of the rice and cook on High for 18 minutes. Stir the rice, cover with foil and let it stand to complete the cooking and the rice to absorb the liquid left over. Serve hot garnished with chopped fresh coriander and almond slivers.
