 Motichur Ladoo 
  • 250 grams Gram flour (besan)
  • 250 grams Ghee
  • 500 grams Sugar
  • 2 cups Water
  • 15 Pistachios
  • 15 Almonds
  • 2 teaspoons Cardamom powder
Roughly chop up the almonds and pistachios. In a large vessel add the gram flour and trickle water, stirring all the time until you have a batter that is smooth and has a thick milk consistency.

For the syrup: Put 2 cups of water and 500 gm sugar into a pan and boil gently till you have a syrup of one-thread consistency. Set aside.

Heat a heavy deep pan, add ghee. When it is hot, use a perforated spoon to drop tiny balls of the batter into the ghee. Remove the boondis when they are golden brown. After you have fried all the boondis, add them to the sugar syrup.

Add the almonds, pistachios, cardamoms, mix thouroughly and let it cool for a while.

Take small amounts of the sweetened boondies and shape into round balls. Place ladoos on a large platter, making sure none of them are touching each other and let them cool before storing in air-tight containers.
