 Uttapam (Vegetable Pancakes) 
Ingredients
  • 4 Green chillies
  • 3 medium Tomatoes
  • 1/4 cup Coriander leaves
  • 1 medium Sliced onions
  • 1 1/2 cups Semolina
  • 1/2 cup Curd
  • Oil
  • Salt (As per taste)
Method
Chop green chillies, tomatoes and coriander leaves and mix with sliced onions, keep aside. Mix the semolina with curd, adding salt and enough water to make a smooth mixture. Let the mixture stand for a half-hour.

Heat a griddle or a non stick frying pan. Add enough oil to spread over the pan. Pour 2 tbsp semolina mixture on the pan and spread into a thick pancake. Sprinkle a spoonful of the chopped onion mixture lightly over the pancake and cover the pan. Cook covered for a few minutes and then remove the cover and turn the pancake over, adding oil to brown the uttapam. Use the rest of the mixture similarly.

Serve with chutney.
