 Sag Gosht (Lamb with Spinach) 
  • 1/2 kg Lamb
  • 1/2 kg Spinach
  • 1 teaspoon Mustard seeds
  • 2 Garlic cloves
  • 2 teaspoons Cardamom seeds
  • 1 tablespoon Coriander powder
  • 1 teaspoon Chopped ginger
  • 1 medium Onion
  • 3 Green chillies
  • 1 teaspoon Sugar
  • 1 teaspoon Turmeric powder
  • 6 Black peppercorns
  • 3 tablespoons Curd
  • 4 tablespoons Ghee
  • Salt (As per taste)
Wash and finely chop the spinach and onion.
Heat oil in a deep bottomed pan, add mustard seeds, peppercorns and cloves. Fry till the seeds start crackling. Add slightly crushed garlic, crushed cardamom seeds, coriander and ginger and fry for one minute, stirring constantly. Add the lamb cubes and fry until they are evenly browned. Add onions, slit chillies and sugar and fry until the onion is golden brown. Add turmeric powder and spinach and cook for three minutes.
Add the remaining ingredients, cover and simmer for one hour or until the meat is cooked thoroughly and is tender. Add water if necessary. Stir well. Serve hot with rotis.
