 Chicken Dilruba 
  • 1 kg Chicken
  • 2 medium Onions
  • 3/4 cup Milk
  • 1 tablespoon Chopped ginger
  • 1 teaspoon Garam masala
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 3 Green chillies
  • 1 cup Curd
  • 3 tablespoons Almonds
  • 3 tablespoons Cashew-nuts
  • 1 pinch Saffron
  • 6 tablespoons Butter
  • 2 tablespoons Coriander leaves
  • Salt (As per taste)
Grind the onions and ginger to a fine paste. Grind the almonds and cashewnuts to a coarse powder. Soak the saffron in 1 tbsp milk.

Heat butter or oil in a deep bottomed pan and fry the onion-ginger mixture, stirring frequently, till golden brown. Add the chicken and curd. Mix well and cook over medium heat until the mixture becomes dry and the chicken begins to brown.
Mix the ground almonds and cashewnuts into the milk and add to the chicken along with the garam masala powder, turmeric powder, chilli powder, salt and green chillies. Cook over medium heat, stirring often, until the chicken is thoroughly cooked. Stir in the saffron-milk mixture and simmer for about 2-3 minutes.
