 Prawns With Pumpkin Leaves 
  • 1 bunch Pumpkin leaves
  • 250 grams Prawns
  • 300 grams Pumpkin
  • 1 medium Potato
  • 1 small Brinjal
  • 300 grams Ridge gourd
  • 1 strips Panch phoran
  • 3 Red chillies
  • 1 teaspoon Turmeric powder
  • 25 grams Mustard seeds
  • 6 Garlic cloves
  • 2 tablespoons Mustard oil
  • Salt (As per taste)
Wash and chop the pumpkin leaves. Slightly scrape the stems. Wash and de-vein the prawns. Rub the prawns with salt and tsp turmeric powder. Shallow fry and keep aside. Grind the mustard seeds and garlic cloves to a fine paste.

Heat oil in a deep bottomed pan, add the panch phutana seeds, red chillies and remaining turmeric powder. When the seeds start crackling, add all vegetables except the pumpkin leaves. Fry for 5 minutes, tossing constantly. Add the mustard paste and cook till the vegetables are 3/4th cooked. Add the pumpkin leaves and cook for a few minutes. Add the prawns. Simmer for 4-5 minutes adding very little water if necessary.

Serve hot with rotis.
