Prawns With Pumpkin Leaves

- 1 bunch Pumpkin leaves
- 250 grams Prawns
- 300 grams Pumpkin
- 1 medium Potato
- 1 small Brinjal
- 300 grams Ridge gourd
- 1 strips Panch phoran

- 3 Red chillies
- 1 teaspoon Turmeric powder
- 25 grams Mustard seeds
- 6 Garlic cloves
- 2 tablespoons Mustard oil
- Salt (As per taste)

Method |
Wash and chop the pumpkin leaves. Slightly scrape the stems. Wash and de-vein the prawns. Rub the prawns with salt and ½ tsp turmeric powder. Shallow fry and keep aside. Grind the mustard seeds and garlic cloves to a fine paste.
Heat oil in a deep bottomed pan, add the panch phutana seeds, red chillies and remaining turmeric powder. When the seeds start crackling, add all vegetables except the pumpkin leaves. Fry for 5 minutes, tossing constantly. Add the mustard paste and cook till the vegetables are 3/4th cooked. Add the pumpkin leaves and cook for a few minutes. Add the prawns. Simmer for 4-5 minutes adding very little water if necessary.
Serve hot with rotis.
