 Mushroom Curry 
Ingredients
  • 200 grams Mushrooms
  • 2 medium Potatoes
  • 4 medium Onions
  • 1 teaspoon Turmeric powder
  • 1 piece Dried mango
  • 2 inches Ginger
  • 14 Garlic cloves
  • 3 Red chillies
  • 25 grams Mustard seeds
  • 3 tablespoons Oil
  • Salt (As per taste)
Method
Wash and chop the mushrooms into thin slices along with their stems. Soak in water along with salt and ½ tsp turmeric powder for 5 minutes. Squeeze out all the water and stir fry in 1 tbsp hot oil till all the water has evaporated. Drain and keep aside. Chop the potatoes into 1 inch thick fingers. Finely chop the tomato.

Make two pastes: Grind the mustard seeds and 6 garlic cloves to a fine paste. Grind 3 onions, ginger, 8 garlic cloves and red chillies to a fine paste.

Finely slice the remaining onion. Heat oil in a deep bottomed pan, fry the sliced onion till light brown. Add the onion paste and remaining turmeric powder and fry till the oil leaves the side of the pan. Add the potato fingers and mushrooms. Fry for 5-6 minutes.

Next,add the mustard paste and cook for 2 minutes. Add water and dried mango and cook till the gravy thickens. Serve hot with rotis.
