Misa Tarkari (Mixed Vegetables)

- 2 cups Bengal gram dal
- 250 grams Cauliflower
- 250 grams Cabbage
- 10 French beans
- 250 grams Pumpkin
- 1 small Brinjal
- 4 inches Radish
- 6 Papadi beans
- 2 small Tomatoes

- 4 medium Onion
- 1 tablespoon Panch phoran
- 1/2 teaspoon Cinnamon powder
- 3 Bay leaves
- 2 inches Ginger
- 8-10 Garlic cloves
- 3 Red chillies
- 2 tablespoons Mustard oil
- 1 tablespoon Ghee

Method |
Grind 3 onions, ginger, garlic and red chillies to a fine paste. Finely slice the remaining onion. Stir fry the cauliflower florets and keep aside. Chop all the vegetables into 1 inch cubes.
Heat the oil and ghee in a deep bottomed pan, add panch phutana, bay leaves and cinnamon powder. When the seeds start crackling, add the sliced onion and fry till light brown. Add the onion paste and fry till oil leaves the sides of the pan. Add the vegetables except the cauliflower florets. Saute on a high flame for 4-5 minutes. Add the dals, saute for 3-4 minutes. Add just enough water to cover the vegetables, salt and turmeric powder and cook on a high flame till the water starts boiling. Add the cauliflower florets and pressure cook the entire mixture till the 1st whistle. Do not cook beyond the whistle.
Serve hot with rice or rotis.
