Mansa Poorga (Sambalpuri Mutton)

Ingredients |
- 1 kg Boneless mutton
- 3 large Onions
- 2 medium Tomatoes
- 4 tablespoons Curd
- 1 tablespoon Ginger paste
- 1 tablespoon Garlic paste
- 1 teaspoon Turmeric powder
- 1/2 teaspoon Pepper powder

- 3 tablespoons Mustard oil
- 2 tablespoons Coriander leaves
- 3 Cloves
- 2 Bay leaves
- 3 Cardamoms (green)
- 2 small sticks Cinnamon
- Salt (As per taste)

Method |
Slice the onions and tomatoes. Marinate the mutton pieces with curd, ginger-garlic paste, salt, pepper and turmeric powder for 2 hours.

Heat oil in a pressure cooker, add cloves, bay leaves, cinnamon and cardamoms. Saute for 1 minute. Add the marinated mutton pieces and stir fry for a few minutes till the raw smell of the mutton disappears. Add ½ cup water, sliced onions and tomatoes and pressure cook for 2 whistles or till the mutton is completely tender.
Garnish with coriander leaves. Serve hot with rice or parathas.
