 Mango Panha (Green Mango juice) 
  • 4 medium Raw mangoes
  • 1 cup Jaggery
  • 1/2 teaspoon Cardamom seeds
  • 1 pinch Saffron
  • Water
  • Salt (As per taste)
Place the thoroughly washed mangoes in a large pan 2/3 full of water and fully immerse the mangoes. Cover and simmer till the water boils and the mangoes are cooked through.

Allow the mangoes to cool, remove the skin and the stone. Mash the flesh of the mangoes with the sugar or jaggery and salt.

Grind the cardamom with saffron and add to the pulp. Put through a blender.

When the pulp is ready, fill in a glass jar with a well-fitting lid. To serve, spoon 1-2 tablespoon of the concentrate into each glass. Top the glass up with water and stir well. Garnish with a sprig of mint.
