Kesri Bhat (Sweet saffron rice)

Ingredients |
- 1/4 kg Basmati rice
- 2 cups Sugar
- 3 Cloves
- 2 teaspoons Cardamom powder

- 8 Almonds
- 1 tablespoon Raisins
- 8-10 strands Saffron
|

Method |
Boil the rice. Take care not to over cook. Each grain has to be separate. When done spread on a plate and cool. Soak the almonds and raisins in water for 15 minutes. Chop the almonds into slivers.
In a large pan, heat the sugar with 1 cup water to form a one thread consistency syrup. Add the cloves to it. Stir occasionally.
When the syrup is ready, reduce the heat to minimum. Add the saffron, rice and remaining ingredients and mix well.
Cover and simmer for a few minutes till the rice has completely cooked.
Garnish with a few raisins and almonds slivers. Serve hot or cold.
