Ghati Masala (Kolhapuri Masala)

Ingredients |
- 1/4 kg Red chilli powder
- 125 grams Dried coconut
- 60 grams Coriander seeds
- 50 grams Garlic
- 50 grams Sesame seeds
- 25 grams Poppy seeds
- 20 grams Cumin seeds
- 10 grams Peppercorns
- 5 grams Mace
- 5 grams Asafoetida
- 8 inches Cinnamon
- 2 inches Turmeric

- 1 piece Ginger
- 2 teaspoons Cardamom powder
- 1 teaspoon Fenugreek seeds
- 1 teaspoon Mustard seeds
- 1 teaspoon Dagad phool
- 1 bunch Coriander leaves
- 10 Cloves
- 4 Bay leaves
- 1/8 Nutmeg
- 1/2 cup Refined oil
- 2 Cassia buds

Method |
Grind the ginger, garlic and coriander to a fine paste. On a hot griddle, roast the poppy and sesame seeds gently and grind to a fine paste. Roast the dry coconut and grind it.
Shallow fry all the other ingredients (except the salt) seperately in a little oil. Grind each separately.
Combine all the ground ingredients with the chili powder and salt in a big bowl and mix well.
Store in an air-tight jar.
