Bhendi Chi Chincha-Goola Chi Bhaji (Lady's Fingers with Tamarind-Jaggery)

Ingredients |
- 1/4 kg Ladies fingers
- 2 tablespoons Tamarind pulp
- 2 tablespoons Grated jaggery
- 1/2 teaspoon Mustard seeds

- 1 tablespoon Oil
- 1 pinch Asafoetida
- 1 pinch Turmeric
- Salt (As per taste)

Method |
Wash and dry the lady's fingers. Chop them into 3/4 inch bits.
Heat oil in a deep bottomed pan, add the mustard seeds, asafoetida and turmeric powder.

When the seeds start crackling add the chopped lady fingers. Saute on a high flame for 5-7 minutes. Add the tamrind pulp, a few tablespoons of water and grated jaggery. Mix well.
Reduce the heat and cook covered for about 15 minutes, stirring occasionally.
