 Bhakri (Hand-Flattened Bread of Bajra or Jowar) 
Ingredients
  • 6 cups Bajra flour
  • 12 tablespoons Water
Method
Mix the flour with enough water to form an elastic dough. Sprinkle some fresh flour on a rolling board. Set the ball of dough on the flour and pat down with your palm and fingertips, constantly rotating the flattening dough so it spreads evenly. If necessary, sprinkle more flour on the board to ease the process.

Meanwhile, heat the griddle. When the dough is evenly thin and between 9-12 inches indiameter, gently place on the hot tava, top side down. Spread a little water with your hand on the now-upper side of the bhakri.

After 1-2 minutes, turn the bhakri over. Let it roast for a few more minutes. Then remove it off the tava,and place it gently on direct flame, it will blow up like a balloon. Take off fire.

Serve hot with unsalted white butter or ghee.
