Aloo Chi Vadi (Colocasia Leaf Rolls)

- 6 Colocassia leaves
- 3 Chopped onions
- 100 grams Gram flour (besan)
- 50 grams Tamarind paste
- 1 tablespoon Garam masala
- 1 teaspoon Coriander seed powder
- 1 teaspoon Ginger paste

- 1/2 teaspoon Garlic paste
- 1 pinch Sugar
- 1 teaspoon Cumin seed powder
- 1 sprig Coriander leaves
- 1 teaspoon Chilli powder
- Salt (As per taste)

Method |
Soak the tamarind paste in enough water(about 10 tablespoons) to make a paste. Keep aside a few tablespoons. Combine all the dry ingredients in a mixing bowl and use the tamarind water to bind them together. Add the ginger and garlic pastes. Add sugar and test for seasoning. Keep aside.
Wash and dry the alu leaves. Sort them according to size (big, medium, small) and make 2 sets of three each. These will form the layers of the roll. Spread the largest leaf out on the center, with the veined surface (the back of the leaf) facing you. Apply a layer of tamarind paste to its entire surface. Then spread the flour mixture evenly over it. Place the second leaf on top and press it down onto the first without squeezing out any of the paste mixture. Repeat in the same manner for the third leaf.
Roll the layers gently but firmly into a cylindrical tube. You can even tie the rolls if you like. Follow the same procedure for the other two sets of leaves. If the rolls are very long, you may cut them in half before steaming.
Steam the rolls in a pressure cooker or steamer for 15 minutes. Cool and slice. Season with sesame seeds and grated coconut.
Serve with chutney and tea.
