Raw Jackfruit Pulao

Ingredients |
- 2 cups Long grained rice
- 1 cup Raw Jackfruit segments
- 1/2 cup Shredded cabbage
- 1 large Onion
- 2 Spring onions
- 5 Green chillies
- 1 teaspoon Chopped garlic
- 1 teaspoon Chopped ginger

- 1 tablespoon Coriander leaves
- 1/2 cup Curd
- 2 tablespoons Grated coconut
- 2 teaspoons Lemon juice
- 2 tablespoons Milk
- 1/2 teaspoon Sugar
- Salt (As per taste)

Method |
Wash and soak the rice in water for 30 minutes. Boil with salt till each grain is separate. Drain and keep aside to cool. De-seed and quater the jackfruit segments.Finely slice the onions.
Heat oil in a pan, add chopped jack fruit and fry till golden brown. Drain, keep aside some for garnishing and add the rest to the rice. To the same oil, add onions, stir fry till dark brown. Keep aside some for garnishing and mix in rest with the rice. Into the oil, add cabbage, chillies, ginger, garlic and stir fry for 3-4 minutes. Add the curd and stir fry for a few minutes. Add lemon juice, salt, sugar and stir fry further for another minute. Add coconut and mix well. Add into rice and mix till the rice and masalas are well blended. Sprinkle milk over the rice. Bake in a moderately hot oven for 10 minutes or simmer on indirect heat for 15 minutes.
Garnish with chopped coriander, jackfruit and onions. Serve hot with raita or plain curd.
