Masala Raal (Prawn curry)

Ingredients |
- 500 grams Prawns
- 6-8 Shallots
- 1/2 inch Ginger
- 2 teaspoon Tamarind paste
- 1 tablespoon Tomato Sauce

- 1/2 tablespoon Cornflour
- 2 tablespoons Ghee
- 1/2 teaspoon Sugar
- Salt (As per taste)

Method |
Shell and devein the prawns but leave the heads (if you prefer) and tails on. Peel and dice garlic, ginger and shallots. Mix the tamarind paste in 2 tbsp of water and mix. Marinate the prawns in tomato/chilli sauce and refrigerate for an hour.

Mix the corn flour into a smooth paste with 1/4 cup water.
Heat a browning dish on High for 6 minutes. Add ghee and cook the shallots, garlic and ginger on High for 2 minutes. Stir if required. Add the prawns to the browning dish with garam masala. Cook on High for 5 min. Add remaining marinade, corn flour paste, sugar and salt and finally the tamarind water a little at a time. Cook on High for 5 minutes. Stir well, garnish with fresh chopped coriander and serve with rice.
