Kozhimutta-Urula Kizhanga Curry (Egg-n-Potato Curry)

Ingredients |
- 4 Eggs
- 4 Potatoes
- 100 grams Sambhar onions
- 1/2 cup Grated coconut
- 3 Green chillies
- 1 inch Ginger

- 4 Garlic cloves
- 1/2 teaspoon Garam masala powder
- 2 teaspoons Vinegar
- 1/4 cup Coconut oil
- 2 teaspoons Mixed nuts
- Salt (As per taste)

Method |
Hard boil the eggs, shell and slice lengthwise into two halves. Grind the coconut, chillies, ginger and garlic to a fine paste. Wash, peel and chop the potatoes.
Heat oil and saute the onions for a minute. Add the ground paste and the chopped potatoes and saute for a minute. Add garam masala powder, salt with 1 cup of water and cook till the potatoes are tender. Add the eggs and vinegar. Mix the contents well and cook for 2-3 minutes.
Remove it from the fire and transfer the contents to a serving dish. Garnish it with the chopped and fried nuts.
Serve hot with rice and pappadam.
