 Kozhierchi Varthada (Chicken Roast) 
  • 1 cup Grated coconut
  • 2 teaspoons Chilli powder
  • 2 teaspoons Coriander powder
  • 2 teaspoons Garam masala powder
  • 3 teaspoons Pepper powder
  • 1/4 teaspoon Turmeric powder
  • 100 grams Sambhar onions
  • 5 Garlic cloves
  • 1 teaspoon Cumin seeds
  • 4 teaspoons Coconut oil
  • 4 teaspoons Vinegar
  • 1 teaspoon Curry leaves
  • 1 medium Chicken
  • Salt (As per taste)
Grind the coconut, onion, green chillies, ginger, garlic and the cumin seeds to a fine paste. Mix the ground paste with the chilli powder, coriander powder, garam masala powder, pepper powder, turmeric powder, coconut oil, vinegar and the salt till well combined. In the meantime, wash, clean the chicken and scoop out the insides.

Slit the chicken on all sides with a fork. Stuff the chicken with the prepared mixture and also coat it on the outside. Leave the chicken aside for 2 hours, to marinate.

Roast the chicken on hot coals or grill it on a gas stove or bake it in a greased oven dish till tender and juicy. Transfer the chicken to a serving dish. Garnish it with the roasted curry leaves.

Serve hot.
